I have just stupidly agreed to cook a home cooked meal for someone that I am trying to make a good impression on.

Problem One: Yes I am an ex apprentice chef so no problems there cause I can definintely cook, however, everything I cook is huge and takes a long time to prepare and cook, in fact most of my recipes need to be prepared a day in advance.

Problem Two: When I am trying to impress someone I tend to get nerves and screw things up....so I have no doubt that I am going to do something stupid like use self raising flour instead of plain flour or something just as idiotic.

Know anything I can do to calm nerves and any recipes that will make a good impression but don't take hours to prepare...(I don't care about it being cheap or anything like that).

bread is excellent for calming nerves. when making bread, it is always unreasonably thoroughly kneeded. it just feels so good to beat the living floop out of it, and it's squishy, too! try making something with eggs, egg dishes are rather hard to screw up, and if you do they're still tastey

When i take job interviews. I try to look like a happy fun person who smiles alot (which i am) that way i will look like i would be a good person to work with.

If you want to make a good impression. just be cheerfull and smile lots.

Better hope this person isnt Vegetarian or Vegan, cooka couple of dishes incase...
A few deep breaths, some poi/whateveryou do and maybe some of my choccy milk will help *hands over yummy milo milk*

some suggestions:

a roast with roast vegies

bruschetta

a stir fry with rice

a nice green or red curry

pasta (pretty easy to have ready to go in a pot and then just reheat) with some nice bread and wine... followed by some desert...

just a couple of ideas....

lasagne is my fall back with a salad. al made in advance so all the dishes are done well before hand

Yeah I make a mean lasagne but I have to prepare it a day in advance to get the right flavours...I only have from 5pm to make something scrumptious for dinner tonight.

Don't cook anything for the first time and prepare things that take time (such as the core ingrediants) in advance, then do the final cooking when they're there. Less effort, you look more organised, less suprises and less to go wrong. Plus, if you don't know what the person likes, go for fairly neutral things rather than adventrous/spicy/weird etc
