Should eggs be kept in the fridge or out of the fridge?

In our house we keep them in the fridge...but I keep hearing that they must not be kept in the fridge confused, either way it hasn't made me ill yet.

i don't think you have to keep them out of the fridge.

origionally (in the olden days) they were kept in the pantry (a sort of walk in cuboard in which the temperature was cooler than the rest of the house) to keep them cool, most modern houses don't have pantries and are usually quite warm so keeping them in the fridge is quite a good idea, alternatively keeping them in a cool area of the house or shed or something is just as good.
some people say that they are better (tasting and the like) kept in a cool area rather than the fridge but i think it just depends on your preference.

as far as i know fridging them doesn't make them bad and i know lots of people who keep them in the fridge and they're fine wink

Oooh! Oooh! I know this one!

Keeping them in the fridge makes them taste funny, because the shells are porous, and they absorb all the smells from everything else, because the air can't move around in the fridge, like it can in the pantry. Pantrys always have little windows. It's a real pain trying to steal stuff through them. Especially when you're 6 and they're 6 foot up a wall biggrin

That's interesting about how the smells can infiltrate the taste of the egg (hee hee, 'infiltrate'. i just made fridge smells like terrorists tongue ) i never knew that, and keep eggs in the fridge.

wouldn't it depend how you got them, like if you got them in a store where they are chilled you keep them chilled in the fridge while if you get them fram a farm fresh from the hen's nest them best to keep them out.

Depends on how soon you plan on eating them. You're not suposed to freeze/thaw things too often, so it may apply to cooling/warming too, especially with things like eggs or meat, where bacteria can take hold really quickly.

The shells on eggs have to be porous enough that the chicks inside can breathe, but at the same time the liquid can absorb anything that passes through the shell. Not a problem though if the garlic and onions in the fridge are going in an omelette.

well it depends on the climate as well - we live in a pretty warm neck of the woods - so keep them in the fridge.

ive never done a test though for taste. maybe ill leave an egg in the pantry for a week and do a test against a refridgerated egg.

lol my housemate went home just before christmas and got some organic free range super duper healthy eggs from her neighbours farm... she then kept them in the cupboard until she could think of a good enough occasion to eat them, cos obviously these are very special eggs, not like your common or garden tesco value ones... they're still there now... we're all too scared to move them in case one of them breaks and stinks the house out!

On the cooling/warming thing...
Dont freeze/thaw, as bacteria are NOT killed by low temperatures, at least not in a household fridge, so that every time you thaw, you are getting the food warm again, thus allowing bacteria to grow. Thats why it is better to thaw in the fridge or by microwave, since both ways dont give enough time for baceria to get to nasty levels.

It takes 10-20 mins for bacteria levels to double. Remember that.

As for cooling/warming, never leave anything out of the fridge for more than 20 mins cos every time you do, the bacteria levels will double. Ergo you get sick and die.

I used to tell people in supermarkets this cos I've got my food hygeine certificate, and my usual statement was:
"you've left that ham out for half an hour. Sell that, and you'll kill someone"

Oh and as for using a microwave, make sure everything you re-heat gets over 67 degrees for at least 5 mins. This kills most nasties. (This doent mean re-heat for 5 mins, just heat stuff to 80 ish then it should stay over for long enough)

I wonder if you could put eggs in a box with some nice smelling stuff so they absorb the smell then take them away and use them for air fresheners biggrin

A couple of balls short of a full cascade... or maybe a few cards short of a deck... we'll see how this all fans out.

I watched a delia smith show once and she said if you get eggs straight out of the fridge and cook them they are not as good because the yolk and white will cook at different speeds. She recommends keeping them in the fridge, but taking them out for a couple of hours before cooking them so they get to room temperature.

Yeah, I think that allowing the eggs to get to room temperature is especially important if you're baking - at least so my mother told me!

eggs are fine in a cool dry place until best before date, they don't need the fridge although that can prolong their shelf life.

a little trick if an egg has no best before date on it and it's been in the fridge, if you touch the pointed end to your lower lip then the rounded end you should feel a differenc in temp due to how the yolk sits (should be warmer one end due to air gap)
if both ends are the same (cold) then the egg is not great, the difference is only faint but try it wink
