Llapingachos are an Ecuadorian food.
They are kind of like... a cheesy potato cake.
I visited Ecuador for a month this year and absolutely cannot get over the food. It was AMAZING.

Haha. No, not at all.
They serve a lot of fried plantains, but that's just along side the main course.
The food on the coast was amazing, lots of seafood and such.
