Coconut rice

Boil the rice with 3/4 of water u normally use and before it's done add a can of coconut milk and let boil under the lid untill it's ready. always delicious! All the coconut milk doesn't have to dry or soak into the rice..

I won't go into details, i always cook off the head.. but with coconut rice i just love vegetables like onions, peppers, mushrooms etc and then some fruits like pineapple or banana and all this mixed in a currysauce with a lot of oil and peanutbutter!! And u could try making big slices of eggplant wit sweetchili sauce and put a big slice of mango with it on the plate!

Microwave Syrup Sponge that actually works

8oz plain flour
4 oz sugar
7 floz water
5 floz vegetable oil (something with little flavour, ie not extra virgin olive)
1 tsp baking powder (heaped)
2 tbsp golden syrup

Directions:
1.) Sift the flour, sugar and baking powder into a mixing bowl.
2.) Stir in oil and water and mix thoroughly, beating lots of air in.
3.) Grease a large pyrex bowl, pour golden syrup in the bottom and then the mixture ontop
4.) Cover the bowl with clingfilm and pierce a hole in the middle (this is essential).
5.) Microwave on high for 7 minutes (change if you don't have an 850watt), then leave to stand for a couple of minutes before removing clingfilm.

I'm going to render unto you the powerful knowledge of my veggie chili recipe. Use it wisely. Everyone who tastes it says, "Wow! Great chili!" Seriously.

The one caveat is that ground round may not be vegan. I believe it is. But it contains carrageenan and tapioca starch, and I don't know where those come from; so if those are safe, the whole thing is safe. I myself am just a vegetarian.

Anyway,

1/2 pack of Yves Ground Round
an onion
3 cloves garlic
some salsa, or crushed tomatoes
green/red peppers and mushrooms, if you so desire
400 mL kidney beans
cumin, oregano, basil, tobasco, black pepper, chili powder

1) Sautee the chopped onion and garlic in a pot.
2) Toss in the ground round, and heat on low-mediumish.
3) Add salsa/crushed tomatoes. I've never really used any specific metric for this step -- just keep scooping until the chili has reached the desired degree of fluidity/sauciness. You shouldn't need too much.
4) Add chopped peppers/mushrooms if you've got them. More heat+stirring.
5) Throw in the beans. Yet more heating and stirring.
6) Add spices in proportions vaguely resembling the following:

2 tsp cumin (for that nutty flavour, apparently)
2 tsp chili powder
1 tsp oregano
1 tsp basil
1/2 tsp black pepper
a bunch of tobasco

Voila! Chili.
