an eclair is a pastry not a cake, and i have no clue what banoffee cake is (assuming you mean banoffee pie).



I've dedicated a lot of my time in recent years to perfecting cake recipes (and many deserts/sweet things for that matter), my current favourite is the type that never gets iced and made to look pretty, but instead ends up chopped up into a big sundae.



Since failing to finish making a chocolate cake last week we've been enjoying chocolate fudge sundaes this week instead (with proper melted homemade chocolate fudge, none of this crap you get in bottles made from icing sugar). Being able to see how much sugary and oily goodness goes in when you make stuff yourself is a humbling experience. rolleyes

I had this Caramel pastry cake once, good stuff. It had a caramalized centre about 8 centre metres thick. it was sitting on a sweet pastry base and had a pastry top as well. The top was covered in cream and sprinkles of chocolate. Best cake i have ever eaten. I dream of it sometimes. If I could make one, i would care for it, touch it, and love...I love my cake...I would give it a name then consume it as I have done before.

I know, it is pretty wacked out to be making a cake from bovine secretions when you think about it isn't it? The good news is you can make very good approximation of the texture of baked cheesecake using silken tofu
