I have acrobat viewer 5.1 on my computer and normally it works fine but recently when i click on a .pdf link it just displays an window with an empty image box (the little circle, triangle and square thingy!) and won't let me see it unless i save the document and open it with acrobat.....which is really annoying.

I can't work out what i have to do so that it just opens it Internet Explorer. (I'm using Windows XP)

Try using Mozilla Firefox as your browser.
Not Internet Explorer.

I'm sure there must be a simple way to make it work..i just can't find it! I'm not sure if i can be bothered to get a different browser!

star - go to https://www.adobe.co.uk

and download the latest version of acrobat, and remove the old one, and install a new one, and then see if that soves it.....
