I know its not even close to shrove tuesday, but i made these pancakes last weekend, and they are too good not to share!! I just have to check the ammount of coconut milk i used.. i know it was a full can, but im not sure how much is in a can... duhhhhhhhhh

ALMOND & COCONUT PANCAKES
100g of flour
100g of crushed almond
2tbsps of sugar(mopre for the sweet teeths out there)
half a teaspoon of salt
1.5 teaspoons of salt.
2tbsps of melted butter
2eggs and an extra egg yolk
250ml(i think!) of coconut milk.

METHOD:
1) mix the dry ingredients together. &set to one side as your pan ,(lightly) coated in oil, warms up.
2) mix the wet ingretients together, taking care not to beat the eggs too much, you want to make a sloppy paste, not an omlet.
3) combine the wet ingredientsand the dry ingerdients. mix and fold the mixture until all the dry ingredients have been removed from the sides.. if the mix is a little too thick, pour in some more milk(dairy milk will do fine if ye have no coconut milk left). if your mix is alittle too wet, add a bit more flour, 2 teaspoons at a time.
4) ladle the mix from your container to the heated pan, one spoonful at a time. fry until golden brown & hold in a preheated oven to keep warm until all pancakes are cooked(dont allow any flatmates to nip in!!)
5) serve with the topping of choice, i personally prefer to squeze a lemon onto mine, with a few splodges of honey.

Naughty Ronopotamus your not supposed to eat meat on shrove tuesday! You must say ten hail marys and 10 our farthers!

I ate some fish, is white meat allowed? I hope so. I love pancake day too, I tried to make Bannana Pancakes, I do NOT recomend it. Stick with Jiff lemon and sugar...

i thought it was pancake day but i wasnt sure!!! and i have a thing of pancake mix in the pantry as well! i'll just celebrate a few days late!

and yes, fish is ok. cos JC had a few years stint as a fisherman and fish is allowed cos it boosts that industry by forcing people to consume it when they cant consume other meats. /cynicism

I had whole grain pancakes, they looked like porrige oat when they were cooking, and had the taste of brown bread..........but they were still nice with sugar and lemon and nutella ubbrollsmile
