you should probably do a search, but i'm a closet anarchist so i'll answer anyway
Weave stuff = both poi going the same direction, butterfly stuff = poi rotating in opposing directions.
This means that to transition from weave to butterfly, or the other way, you'll either need to twist some planes round (eg. spinning forward circles at your side, bring them in front to go into forwards butterfly.) or switch the direction of one of them (stalls, wraps etc.)
Wraps & stalls are gone into a loads of detail in loads of threads.
Plane twisting hasn't been discussed much here as far as i'm aware. Lots of people reckon it generally looks pretty ugly, but IMO thats because they only see people doing it in an ugly way...
(theres a certain style i call 'macho spinning' where people spin as fast as they can and drag the planes all over the place by just yanking the poi around. its not the prettiest

Try out just turning the plane of the poi round, ie. just spinning them in regular circles, and turning the circles round to face different directions. And try to avoid just dragging or pulling them into the new plane, cos that generally looks really messy (and hazardous in the case of fire\beamers).
Remember you can twist planes on any axis - horizontal, vertical, diagonal. Check it out until you find something that looks and feels smooth. Often bringing one or both poi out on a much larger long arm arc makes making large plane alterations easier.
or you could just learn some wraps n stalls which are easier and make easily impressed people go woo! when you do it with fire
