Most of these things come down to preferance. With some experimentation youll figure out which stuff works best for you. I will, however, give you some answers that I think work best...
Size of chain - The most versatile chain length is rather short. Short enough that you can do buzzsaw moves without wrapping around your hands at all. This length allows you to do just about any move with little - no adjustment. To get this length, measure the distance between the tip of your index finger to your arm pit, then subtract 2 - 3 inches. Work it out so this measurement is the length of your entire poi fully constructed. Many people prefer their chains to be a bit longer as it makes under the leg and carry type moves a bit easier but I like shorter ones because I can still do the UTL stuff with them but tosses become much prettier with short chains.
Wraps - Well, I suppose you can wrap just as easily with heavier/bigger heads, but there is definately different technique and style associated with what you use. Smaller heads will more often used for heavy wrap routines, however, because I do feel the size/weight does limit what you can actually accomlish with wraps (rather than how easy it is to do it).
Funny noises - Ive heard one person say that cathedral wicks make strange noises when spun, but as someone who has used cathedrals exclusively, I can say that Ive never experienced this.
Monkey fists - The center could be anything really. Depends who makes it. Could be a non-absorbent core such as wood, could be cotton wadding, or could even be a smaller monkey knot. If youre good with rope and confident you could make your own monkey fists, go right ahead. Self made toys are always nice cuz you know just how you like em. I dont believe theres anything 'special' about HoP's wicks. The construction and craftsmanship are very good but its nothing you yourself couldnt duplicate or improve on.
Why is it 52$ for HoP's wicks? Its cuz of this lil thing called 'Business.' Involves work... Supply/Demand... Ya know
